1. preheat oven to 350 degrees. Line a baking sheet with parchment and set aside.

2. pour dry Scone mix into a large bowl and add 1 cup heavy whipping cream.

3. stir together until mixture is holding together into a ball and can easily be picked up. Gently kneed in any remaining crumbs. Try not to over mix!

4. place dough on a lightly floured surface and pat or roll dough into a circle, about ¾ -1 inch thick. Sprinkle over top with sugar, if desired.

5. cut into 8 pie shaped wedges. For smaller scones, divide dough in half first, roll out 2 circles and cut each into 8 pie shaped wedges.

6. evenly place wedges about 2 inches apart on the prepared baking sheet. If you are making smaller scones, you may need an additional baking sheet.

7. bake for 18-22 minutes (large) or 12-15 minutes (small) until lightly brown and just firm to the touch.

8. remove from the oven and let cool slightly before serving.
